Chicken with Mediterranean vegetables

    First of all, preheat the oven to 200°C.

    Place the chicken in an oven-safe dish and add 2 sprigs of rosemary.

    Separately, in a small bowl, make a marinade with the salt, pepper, paprika, tomato purée, olive oil, and lemon zest.

    Spread the marinade over the chicken and cook in the oven for 20 minutes.

    Next, prepare the vegetables by cutting the potatoes into slices, the courgette into cubes, halving the cherry tomatoes, and draining the black olives. Add a pinch of salt, pepper, and fresh rosemary to give them an aromatic touch.

    After 20 minutes in the oven, take the chicken out and spread the vegetables in the dish around it. Now add some broth so the chicken stays nice and juicy.

    Cook it for 40 more minutes, until the chicken and vegetables have turned golden. As if they’ve come straight from the rotisserie!
