If there is one dish that unites Spaniards at the table, it is rice. At Sangre de Toro, we have tried a different version. Imagine the taste of the Iberian secreto pork fillet releasing its juices, the home-made sofrito sauce filling the kitchen with aromas, and that crunchy touch to the rice… Sounds like a family Sunday, right? Perfect for sharing laughs, stories and, of course, a good glass of Sangre de Toro Original.
Finely chop the onion, peppers and mushrooms.
Salt and pepper the Iberian fillet, fry it in the paella and set it aside.
In the same paella, sauté the onion, peppers and mushrooms to make the sofrito.
Add the rice, stir well and add the hot stock.
Season with salt and pepper and cook for about 15 minutes.
Cut the Iberian fillet into pieces and place it on top of the rice.
Place a sprig of rosemary on top and burn it with a blowtorch for a smoky flavour.
Serve a glass of Sangre de Toro Original and raise it this great moment.
