Cut the fuet, remove the skin and slice it thinly.
Cut the gherkins and onion into very small pieces.
In a bowl, separate two egg yolks and beat them carefully.
Add the tabasco, the English sauce and the mustard, and mix well.
Add the fuet to the mixture and stir evenly.
Use a circular mould to place the tartare on a plate.
Fry the quail eggs, place them on top of the tartare and sprinkle with chopped parsley.
To accompany, toast the bread until it is crispy and golden brown.
