Vegetarian stuffed aubergines

    Slice the aubergines in half.

    Score the flesh diagonally into squares.

    Cook in the oven at 200ºC for 20 minutes.

    Scoop out the flesh, cut it into small pieces and set aside in a bowl.

    Add the cooked short grain brown rice, sun-dried tomatoes, cream cheese, olives, chopped garlic and mix well.

    Fill the aubergines with the mixture and sprinkle grated cheese on top.

    Cook in the oven at 200ºC for 30 minutes and then sprinkle over some chopped parsley.

2 aubergines
200 g short grain brown rice
1 tablespoon cream cheese
1 tablespoon sundried tomatoes
2 cloves of chopped garlic
Grated cheese
